Italian Academy of Cuisine, cod and stockfish in New York

New York, October 22 (askanews) – Cuisine is one of the most profound expressions of a country's culture: it is the fruit of the history and life of its inhabitants, varying from region to region, from city to city, from village to village. Cuisine tells the story of who we are, rediscovers our roots, evolves with us, and represents us beyond borders.

It is the fruit of tradition and innovation and, therefore, must be safeguarded and passed down. This is the mission of the Italian Academy of Cuisine, founded by Orio Vergani, which on October 15th celebrated the 2026 Ecumenical Dinner worldwide, dedicated to cod, stockfish, and other fish preserved in salt, dried, or smoked in traditional regional cuisine.

In New York, the dinner promoted by president Roberta Marini-De Plano took place at Osteria Brooklyn with a starred menu curated by chef Raffaele Solinas.
