More than one in two Italians believe that restaurants should focus more on Italian cuisine to make the experience more memorable, while over 70% say they incorporate traditional Italian recipes discovered or rediscovered while dining out. These data, compiled by TradeLab for Federdistribuzione, highlight how the Away From Home sector, with its specialized businesses and operators, contributes to strengthening the link between Italian agri-food production, restaurants, tourism, and the promotion of Italian cuisine, recognized by UNESCO as an intangible cultural heritage of humanity.
The data shows a market that, despite showing some signs of a slowdown in visitor numbers, continues to grow, with thousands of industry operators committed to adapting their service offerings to meet people's tastes and needs. It's a changing supply chain that requires ever greater collaboration and innovation. From this perspective, specialized modern distribution companies are providing expertise, logistics capabilities, and services that support the evolution of the Ho.Re.Ca. channel, supporting foodservice businesses and fostering greater recognition of Italian products. The growth of international tourism and the ever-increasing attention to Italian cuisine, recognized by UNESCO as an intangible cultural heritage of humanity, also represent an opportunity to strengthen the connection between local area, agri-food production, distribution, and catering.
The event, moderated by journalist Manuela Soressi, featured a discussion on the opportunities and prospects of the Ho.Re.Ca. (Ho.Re.Ca.) channel, focusing on evolving consumer behavior and expectations and the need to build an offering that integrates quality, service, and experience. Speakers included Dario Cuccurullo, Senior Channel & Customer Marketing Director at Campari; Maurizio Danese, Vice President of Pregis; David Martinez Fontano, CEO of Metro and President of Federdistribuzione Horeca; and Roberto Calugi, General Manager of FIPE – the Italian Federation of Public Businesses. "The Ho.Re.Ca. (Ho.Re.Ca.) channel is undergoing a profound evolution, with operators demanding from their partners not only a broad and qualified offering, but also services, flexibility, and tools to support the day-to-day management of their business. In this scenario," stated David Martinez Fontano, President of Federdistribuzione Horeca.
"Modern specialized distributors," he added, "can play an increasingly important role by providing professional operators with dedicated assortments, logistics solutions, and digital services. This approach can help make the supply chain more efficient and competitive, while also supporting the promotion of Made in Italy excellence." The conference also featured a presentation by Alessandro Borghese, chef and television host, who shared a reflection on the role of out-of-home consumption in Italian cuisine, emphasizing how the entire sector plays an important role in promoting Made in Italy excellence, particularly for those, like foreign tourists, who view the gastronomic experience as one of the main points of contact with our country's agri-food and cultural heritage. This has a positive impact on the promotion of Italian products and knowledge of local areas and their traditions.
