(Adnkronos) – "The buffalo mozzarella supply chain, like that of other quality products, faces numerous challenges. First and foremost, those related to economic sustainability, with increasingly high costs for the sector, but also environmental sustainability, regulatory pressures, and the impact of bureaucracy. The challenges are many, and innovation, particularly digital innovation, which is increasingly being discussed today, can offer significant support to the sector in addressing them."
This was stated by Chiara Corbo, director of the Smart AgriFood Observatory at the Milan Polytechnic and the University of Brescia, on the sidelines of the World Buffalo Congress, which concludes today in Sorrento with a day dedicated to Mozzarella di Bufala Campana DOP.
As for Campanian companies, Corbo emphasizes that “there are already many companies that are bringing innovation.
However, the Italian agricultural landscape, and Southern Italy in particular, presents unique characteristics. With innovations increasingly available on the market, the conditions must be created to accommodate them within farms. Southern Italy, and also Campania, operates in a profoundly different environment than the livestock farming landscape of Northern Italy: they are smaller and more fragmented, with less intensive livestock farming.
These characteristics also impact the approach to innovation and investment capacity. Therefore, there is still work to be done to create the conditions necessary for the sustainable adoption of these innovations.
Innovation, however, doesn't mean sacrificing the product's unique character. "Absolutely not. The know-how and expertise of the breeder and producer remain fundamental. Digital innovation and artificial intelligence, so much talked about today, shouldn't be considered a goal, but rather tools to achieve broader goals: safeguarding product quality, ensuring economic, environmental, and social sustainability, and improving working conditions across the entire sector."
