(Adnkronos) – "The most important markets are the closest ones, because, for logistical and shelf-life reasons, we unfortunately can't go very far. France continues to give us great satisfaction." So said Pier Maria Saccani, director of the Consortium for the Protection of Mozzarella di Bufala Campana DOP, speaking on the sidelines of the World Buffalo Congress, currently underway in Sorrento, pointing to technological innovation as a way to expand export opportunities.
"To internationalize our trade, we must also look to slightly more distant markets. The reflections we're making these days, during this world congress, also concern technological innovation and the tools that can allow us to meet the demands coming from, for example, the United States and Japan," explains Saccani.
It is precisely on technology that Saccani draws attention, inviting us to overcome mistrust towards innovation: “it must not be seen as a demon.
Technological innovation has always frightened mankind, since the dawn of time. We must apply it to maintain the excellent quality levels of our products, because only on quality can we compete in the market. Quality, therefore, remains the starting point, even when trying to reach geographically distant consumers. We must also enable distant consumers to appreciate our product.
This is why innovation is the point on which we must work to export more."
"The relationship between new technologies and typicality represents, according to the Consortium director, one of the key issues for the future of the supply chain. New technologies are the challenge for the future. It seems contradictory, but to maintain typicality, we must open the door to innovation," concludes Saccani.
